This is the most delicious, easiest, healthiest soup ever. I impressed some people with it last night, so, i thought i'd share so you could impress people too.
Black Bean & Salsa Soup
2 15oz cans black beans, drained and rinsed
1 1/2c vegetable broth
1c chunky salsa
1tsp ground cumin
4 tbsp sour cream -optional
1 green onion thinly sliced
In a blender or food processor combine beans, broth, salsa and cumin. Blend until fairly smooth.
Heat mixture in sauce pan till hot.
Top each serving with dash of sour cream and onions. eat. impress.
Also my new favorite fake veggie meats, I ate the whole package then read that it was 5 servings totalling 1000 calories, guess i'll go for a run tomorrow.
